How to Select and Store Avocados

It is necessary to ensure that the skin is free from defects such as stains, spots or excessive signs of ripening.

The avocado is ripe if by shaking it you notice that the seed moves or yields to gentle pressure with your finger. If an avocado is not quite ripe, leave it at room temperature for 1-3 days. The process of ripening can be accelerated if the avocado is wrapped in newspaper with an apple or a banana.

If, however, the avocado is ripe, the ripening process can be slowed by storing it in the warmest part of the refrigerator (i.e., not below 6 ° C).

Avocados can be frozen. To do this, you have to remove the pulp, crush it and mix it with a little lemon juice.

For best taste, an avocado should be opened just before consumption, because the pulp quickly turns black. This can be avoided by spraying the surface with lemon juice immediately. On the other hand, if only consuming one half, the leftover piece can be kept in top condition for the next day by not removing the seed, sprinkling it with lemon juice and protecting it with plastic wrap or storing it in an airtight container in the refrigerator.

Nutritional Properties of Avocados

After water, fats are the main component of avocados, so their calorific value is high compared to other fruits, but lower than the coconut, which has a higher fat content.

Avocados supply a small amount of carbohydrates and an even lower amount of protein.

In regards to the fat content, it is mostly monounsaturated and 72% is oleic acid, which is also found in olive oil.

Avocados are rich in minerals like potassium and magnesium, and are low in sodium. Potassium is necessary for the generation and transmission of nerve impulses and for normal muscle activity. Potassium plays a role in the balance of water inside and outside of cells. Magnesium is related to the functioning of the bowels, nerves and muscles and is part of the bones and teeth. Magnesium enhances the immune system and has a mild laxative effect.

Avocados have notable vitamin E content (an antioxidant that aids in blood cell stability and fertility) and contain certain water soluble B vitamins, such as B6 or pyridoxine, which contribute to the smooth functioning of the nervous system.
